Now under the stewardship of Bernard Michaut, an ex-chef, who works with his son Adrien. Their winemaking is meticulous and the wines are benchmarks for the region. They are fastidious about producing concentrated, mineral and very precise wines which reflect the particular terroirs of Chablis, with vines on both Portlandian and Kimmeridgian soils. Motte's wines are regularly chosen for the Tastevinage label, a rigorous selection by the Confrérie des Chevaliers de Tastevin of wines they regard as offering the best of the region in terms of quality and style.

Vineyard and Winery

Grapes are machine harvested to preserve the freshness and purity of flavour. Pneumatic pressing immediately after harvest is then followed by a gravity settling period of 24 hours in stainless steel vats. Fermentation takes place in thermo-regulating stainless steel tanks for approximately 15 days at 21 degrees Celsius. The wine then undergoes malolactic fermentation in stainless for approximately 5 weeks at 20 degrees. Following this, the wine is racked between December to January, and it is fined between February and March. Boutinot began as a tiny importer in 1980, specialising in French wines. Paul Boutinot himself began by personally selecting the wines from France, back in the UK he would unload the trailer by hand. And deliver the crates of wines to customers himself. During vinification the must is cooled to ensure a slow fermentation in stainless steel which allows the development of rich, smooth flavours without the use of oak. There is partial blocking of the malolactic fermentation in one of the component parts to retain a level of bright acidity needed to create balance and poise in the final blend. Once selected, the blend is aged for two months prior to bottling to allow for full integration of the elements to create a harmonious whole. Blending in this way, using the same variety from different plots and adjusting the vinification of each parcel allows for the creation of a hand-crafted, personalised wine with greater complexity and finesse than would be possible working with just one element.

//cdn.shopify.com/s/files/1/0002/3537/2571/files/2D7F6D50-9DAA-406B-BD72-CF222CC11EED.jpg?v=1778771040
genetie-macon-charnay-les-macon-les-piliers
Genetie ‘Les Piliers’ Mâcon-Charnay-lès-Mâcon

Grape

Chardonnay

Style

Dry, White, Medium Bodied, Fresh, Citrus Fruit, Minerality

Country

France

Region

Macon, Burgundy

Volume

75cl

ABV

13%

Dietary

Vegetarian, Vegan

Enjoy the delicious depth of flavour and underlying finesse of Genetie ‘Les Piliers’ Mâcon-Charnay-lès-Mâcon. Here Chardonnay ripens under a Continental climate (typically cold winters followed by warm springs and almost Mediterranean sun in the summer). Once ripe, picking is both by hand and machine. Machine harvesting has the advantage of picking in the early hours of the morning before daylight when the temperature rises; hand picking is gentler and keeps whole bunches intact. After pressing and static settling the must is cooled to around 12°C to ensure a controlled fermentation. Once alcoholic fermentation is complete, wines are left to winter and undergo malolactic fermentation. With enviable priority access to the cellar in Mâcon-Charnay, Samantha tastes each individual tank (up to 20) to select a very personalised blend for GENETIE 'Les Piliers', combining three essential elements - the florals, the exotic and the mineral. The final blend is kept on fine lees until bottling, combining the warmth of southern Burgundy with the elegance and finesse of the special terroir of Mâcon-Charnay-lès-Mâcon.

//cdn.shopify.com/s/files/1/0002/3537/2571/files/0DA57930-B3A2-4F4A-87CD-8C7A9F5C3AA7.jpg?v=1778772022
pernand-vergelesses
Domaine Cornu-Camus, Pernand-Vergelesses

Grape

Pinot Noir

Style

Dry, Red, Full Bodied, Fresh, Elegant, Stylish, Food Friendly, Red Fruits,

Country

France

Region

Pernand-Vergelesses, Côte de Beaune, Burgundy

Volume

75cl

ABV

13%

Dietary

Vegetarian, Vegan

Discover Domaine Cornu-Camus, Pernand-Vergelesses - a dark ruby wine with intense purple reflections. For nearly a century, the house has had the great fortune of working with vineyards which are superbly situated and judiciously farmed. These vines consistently yield very high-quality fruit. For example, some of the vines for Trénel’s Beaujolais-Villages are upwards of 60 years of age.

Maison Trénel is guided by the principles of authenticity of fruit, and authenticity of terroir. The house has always strived to produce wines and fruit liqueurs that exemplify the purest expression of their origins. This sentiment is born from a love of the land, as well as a deep respect and continued practice of Burgundian traditions. It also informs the house’s work ethic, written in Latin and evidenced on Maison Trénel’s emblem: Bene Facit Id Quod Bene Amat, or “…we can only succeed at that which we know well, and love.”

In 2015 Maison Trénel was bought by M. Both a wine producer and a négociant, the domaine uses a combination of owned vineyards from some of the region’s most prized sites and bought-in grapes from around 100 of the region’s finest growers. Skilled winemaker Franck Grux is driving the success of the domaine and is responsible for some of the most delicious whites in the Côte d’Or. His range of Chardonnays and Pinot Noirs have a distinctive tension and fine persistence coupled with elegant use of oak and clear sense of terroir - it’s little wonder the domaine has such a devoted following. The estate was founded by Olivier Leflaive in 1984 when he set up on his own, growing his eponymous domaine to 17 hectares. It is now one of the top addresses in the Côte de Beaune.

Vineyard and Winery

The grapes come from the 1er Cru Vauvry vineyard which is situated at an altitude of 250 to 300 metres. Its name, derived from Celtic origins meaning "wet place" or "marshy land," reflects its connection to the abundant groundwater that sustains the surrounding meadows. This single vineyard covers 4.53 hectares and benefits from an east-southeast facing aspect. The terroir is characterised by a marly limestone subsoil that underpins the gently sloping vineyard and a calcareous clay topsoil. Sustainable viticultural practices are employed and the estate holds the HVE3 certification. Vineyard management focuses on disease prevention and the precise control of yield and leaf area, to promote vine health and fruit quality. Biodiversity is actively encouraged through targeted initiatives, such as the establishment of beehives to support the vineyard ecosystem. Sustainable pest management strategies such as beneficial insects, microorganisms, and employing natural substances to control pests, diseases, and weeds, lead to a reduction in treatment applications. Agronomic interventions are focused on mechanical weeding and tilling, promoting soil health and structure.

The grapes were entirely destemmed prior to vinification. Following pressing, the must underwent 24 hours of static settling to clarify the juice. Both alcoholic and malolactic fermentations took place in oak barrels, allowing for controlled temperature management and the development of complex secondary aromas and flavours. The wine was matured for 12 months; comprising eight months in French oak barrels, of which 12% were new (80%), and four months in stainless steel tanks (20%) to maintain vibrancy and freshness.

Grape

Chardonnay

Style

Dry, White, Medium Bodied, Fresh, Mineral, Orchard Fruit, Balanced, Expressive, Vanilla

Country

France

Region

Burgundy

Volume

75cl

ABV

12.5%

Dietary

Vegetarian, Vegan, Sustainable, Organic, Biodynamic, Natural, Low in Sulphur

Grown on pure Kimmeridgian limestone, Fontaine Goby Bourgogne Grande Réserve Chardonnay unfolds with inviting notes of fresh orchard fruit—crisp apples and pears—complemented by subtle hints of toasted almond and vanilla.

Cold stabilisation at -3 degrees for 5 days before filtration and finally bottling.

//cdn.shopify.com/s/files/1/0002/3537/2571/collections/62_819fee41-d053-4a6b-9b58-e667a017e11c.png?v=1789345951
