Passitivo is produced using only the best Organic Primitivo grapes grown in low-yielding vineyards in Puglia, Southern Italy. A portion of these grapes are dried (Apassimento) following harvest to concentrate their aromas and rich fruit flavours. Passitivo has a deep red colour and a complex bouquet reminiscent of cherries, raspberries and red currants. The oak aging adds a pleasant roasted and spicy aroma and makes this full-bodied and supple wine perfect with roasted red meats and mature cheeses.
