Cascavel, Les Terroirs des Papes, Châteauneuf-du-Pape is a premium red wine from the Southern Rhône region. The mouthfeel is upfront from the start, presenting defined fruit and a pleasing sweetness. The wine is full-bodied, fleshed out by a remarkable velvety sensation. The tannins are fine and well integrated and fruitiness dominates, with more spicey peppery and liquorice notes appearing later. A hint of pepper on the finish energises the length. Best enjoyed with Autumnal or Wintery foods or a luxurious barbeque. Duck a l'orange, leg of lamb, fresh cheeses, and chocolatey desserts.

About the Producer

For more than 15 years, Caravinsérail has strived to promote a lifestyle in accordance with the convictions of its owners, and a desire to communicate the flavours specific to the southern terroirs of south-eastern France. Originally based at the foot of Mont Ventoux, the business structure has evolved over time, moved to a new space, but remained true to the original wine centric approach. The “garden” of Caravinsérail wines has gradually expanded to open up new vineyards displaying the colours, sights and charms of this enchanting Provence neighbourhood.

Vineyard and Winery

The plots of rolled pebbles are particularly well draining and the vines are generally quite old. The sun stored in the 'pudding' stones during the day radiates at night, creating exceptional ripening conditions. The youngest plots are on red clays, or compacted sands that are more draining than the clay. Just like the grape varieties, the plots complement each other well and produce high quality grapes and resulting wines; all with finesse. The surface area of ​​the plots is 9 hectares. The soils are based on red clay, sandstone, rolled pebbles as well as compacted sand terraces. The exposure is oriented East, South-East. The altitude of the plots varies between 80 to 150 m.

Destemming upon arrival at the winery, maceration for three weeks to a month before yeast is added, punching down and pumping over, no fining. Aging in concrete vats in part, in demi-muids for 25% of the volume for 12 to 15 months. Blending and aging in bottle for 6 months.
