Bibo Kleiner Revoluzzer Rheingau Riesling is produced from hand-harvested Riesling grapes from Hallgartener Sub-region of the Rheingau.  When the grapes arrive in the winery they are gently processed through a French basket press after an extended cold soak to extract full flavour.  It is then left to ferment for around ten months in double-piece oak barrels.

The grapes are grown sustainably to look after the soils for future generations and the winery has some of the lowest levels of CO2 production in the country.

Bibo Kleiner Revoluzzer Rheingau Riesling is named after the freedom fighter Adam von Itzstein, who stood up for democracy locally over 150 years ago.  The wine matches well with fish and shellfish as well as white meats acting like an apple sauce with pork.
