These wines are bottled in the Spring that follows the harvest after spending the winter on the lees.  This extended contact gives the wine a richer texture and the lack of much intervention during the cooler months allows the wine to retain its freshness and delicacy making it the perfect accompaniment to Seafood of all kinds.
