Transformed by naturally occurring wild yeast this is a Sauvignon Blanc of considerable depth and opulence. This Sauvignon Blanc has aromas of candied citrus peel, honeysuckle, brioche, tarragon and lemon thyme. The palate is full with flavours of citrus and stone fruit, with a crisp acidity, a delicate, smoky nuance, and notes of flint on the long, dry finish.
