Maison Cascavel's Les Cimes de Montmirail Gigondas is an exquisite blend of dominant Grenache backed up by Syrah. It features a complex nose of garrigue, thyme, and bay leaf, complemented by intense aromas of red fruits, nuts, and Espelette (locally grown) pepper. Its delicious and elegant tannins and natural balance make it perfect for Provençal dishes or goat and sheep cheeses.

About the Producer

For more than 15 years, Caravinsérail has strived to promote a lifestyle in accordance with the convictions of its owners, and a desire to communicate the flavours specific to the southern terroirs of south-eastern France. Originally based at the foot of Mont Ventoux, the business structure has evolved over time, moved to a new space, but remained true to the original wine centric approach. The “garden” of Caravinsérail wines has gradually expanded to open up new vineyards displaying the colours, sights and charms of this enchanting Provence neighbourhood.

Vineyard and Winery

The plots of this Gigondas are located at a place called Petit-Montmirail to the south/southwest of the Montmirail lace massif. They are sheltered from the Mistral wind by the woodland, and flourish, freshly nestled against this naturally rolling land. On very calcareous soils, these more than thirty-year-old Grenache and Syrah vines must draw their nutrients from deep within to develop their leaf system to ripen and nourish the grapes. These stony, draining soils produce very fresh wines of great finesse. The vines have been converted to organic cultivation for almost 10 years, with light mechanical work and particular attention paid to the quality of the soil and its biodiversity.

Destemming upon arrival at the winery. Maceration for three weeks to a month before the addition of yeast, punching down and pumping over, the wine is bottled without fining.
