This elegant organic Cava Brut Reserva from Vallformosa displays a pale yellow hue with greenish tints and delicate, well-integrated bubbles. On the nose, expect vibrant white fruit aromas of apple and pear complemented by floral and spicy undertones that evolve gracefully toward sweet, toasty notes of aging. The palate opens fresh and inviting, revealing subtle white fruit, almond, and pastry flavours. Fine effervescence creates a creamy, charming mouthfeel, finishing with lingering fruit and faint aniseed notes. A refined choice for seafood dishes, particularly bluefin tuna.

About the Producer

In 1865, the birth of Vallformosa was marked by the cultivation of vineyards near the Masía La Sala in Vilobí del Penedès, Barcelona. By 1938, the first bottles of Vallformosa cava were crafted, establishing the company as a responsible and sustainable producer. Environmental stewardship is at the core of their operations, with all wines requiring 40% less energy and 99% of waste being recycled. Additionally, Vallformosa is dedicated to promoting organic practices and currently 20% of their grapes are organically grown, with a goal to expand this percentage year after year.

Vineyard and Winery

A mixture of manual and mechanical harvesting with Macabeo picked in early September, Xarel·lo in the middle of the month, and Parellada in early October

Fermentation was in stainless steel tanks with temperature control (14-16ºC), followed by a second fermentation in the bottle using the Traditional Method.

It was aged 18 for months, during which the lees add complexity and character.
