The whisky in this Daftmill 2012 Winter Batch Release was drawn from a combination of seven first fill ex-bourbon barrels and five first fill ex-oloroso and PX sherry hogsheads. All casks were filled on 25th December 2012 and matured in the upper level of the distillery's dunnage warehouse until bottling in February 2026.
The whisky was produced using Concerto barley grown in the South fields at Daftmill. The barley was harvested on the 2nd and 3rd of September 2011, before being dried and stored on the farm and later malted in Alloa during the spring of 2012.
About the Producer
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm’s quiet periods; midsummer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.
