Their philosophy is summed up in the expression "from Strain to Cup". At Laureatus they are winegrowers as well as winemakers, which allows for, among other things, the control over the development of the vines, decision making about their growth, planting, etc. In short, they have all the control, the freedom and the responsibility which means no dependence on external suppliers. They prioritise the quality over quantity and the authentic and transparent over artifice, always "from Strain to Cup".
Vineyard and Winery
The soils have a Coarse, sandy texture, with a high content of siliceous stone particles and very low clay content. They are acidic, permeable, shallow to medium deep and with the subsoil bedrock in the process of decomposition. The vineyards, some of which are almost 50 years old, face south-southwest, which provides them with ideal sunlight throughout the day, thus favouring optimum ripening of the grapes. The vines are trained using the traditional vine training system with the grapes 1.80 metres above the ground to prevent rotting and facilitate aeration.
Hand harvest in small boxes, de-stemmed, gently pressed and cool fermented in stainless steel to ensure the delicate flavours are optimised.
