This Chablis is very fresh, lively and mineral with an elegant delicateness. On the palate, aromas with flint, green apple and lemon retain their freshness for an extended period. Perky and full of juice, the attack is intense. Long and likeable persistence leads to a smooth and serene finish. This Chablis pairs perfectly with pork, chicken, fish, cheese and vegetarian salads.
About the Producer
Being former accountants, they‚ are not from traditional Chablis stock and not only aim to set themselves apart by being fully committed to organics & biodynamics, but also by experimenting with different cuvees (the richer Bourgogne Blanc against the more classic Petit Chablis) and also amphora to create distinctive and drinkable wines, both of these approaches, embracing newer ideas and concepts in one the most traditional old world regions.
Vineyard and Winery
The wines of Domaine Goby are from a family-run estate located in Burgundy, near Chablis. The vineyards are cultivated with deep respect for nature and biodiversity. Prioritising organic methods, natural products and minimal intervention they aim to produce natural, healthy, and highly aromatic wines. They are fully committed to biodynamic farming and have a cellar of the different vintages of the biodegraded cow horn. And of their vineyards are accredited by Demeter. No mean feat in Chablis.
