About the Producer
The Domaine Grossot estate owned by Corinne and Jean-Pierre Grossot is anchored on the renowned hillsides of the village of Fleys. It is thanks to the work and determination of Jean-Pierre's grandparents that this estate was created in the 1920s. They then passed on their love of the vine to their children who have continued to share it with current generations.
In 2007, their daughter Eve joined them in this wonderful adventure and shares the same passion as her parents for this wonderful profession, a passion that shows in thequality of the vineyards and the resulting wines. All efforts are focussed on the constant search for the expression of the terroirs in order to develop fine and elegant wines in pure respect of the typicalities of the Chablis vineyard.
Vineyard and Winery
The plots in the Chablis appellation are mostly located on the village of Fleys, but also in the municipalities of Chichée and Fontenay, their total area is 12 hectares. They are mainly oriented north and northwest on a Kimmeridgian soil made of clay-limestone marls. The oldest of them are 35 years old. All plots are conducted in organic farming.
After destemming and gentle pressing the juice is put in a tank to realise its alcoholic and malolactic fermentations. This will be followed by a long aging on fine lees to refine the aromas and develop the complexity of the flavours. If necessary, the wine is filtered through bentonite to remove proteins, as well as a cold switch that removes tartar crystals. Then, they perform a tangential filtration, which they consider the most respectful method of filtering wine. The wine is bottled between 13 and 20 months after harvesting.
