Les Parcellaires de Saulx Gevrey Chambertin 'Les Evocelles' has a beautiful ruby colour with shiny reflections. Its slightly toasted notes and subtle blend of concentrated red fruits, with hints of gooseberry and raspberry, evolve into delicate vanilla tones. This fine and mineral wine has a balanced structure, great length, and subtle aromas of red fruits and spices. Glorious with Red Meats and cheese boards which is a lazy but accurate food pairing recommendation. Delicious with game birds, but arguably too good for the Christmas Day table, better to take the time to savour it in a more relaxed setting.
About the Producer
New things in Burgundy are very rare, to say the least, almost unknown. The creation of Parcellaires “de Saulx” in 2017 approached the wine house tradition differently.
Les Parcellaires de Saulx is a negociant deluxe focused on producing wines from single plots in the most prestigious terroirs of Burgundy. From Côte de Beaune to Côte de Nuits, from village appellations to Grand Cru, they work with producer partners who use organic or biodynamic practices to cultivate their vines.
The wine house is located in Meursault on the foundations of a centuries-old establishment and it can be justifiably proud of its beautiful and extensive historic cellars of more than 1500 square metres, enabling wines to be produced, aged and stored in perfect conditions.
The American owners, who also own the champagne company, Leclerc Briant, Domaine Belleville in Rully and the Château de la Commaraine and its Clos in Monopole of 4 hectares in Pommard, have brought to life their vision of a micro wine house that is Plot-based and does not blend wines.
Vineyard and Winery
This climat is located in the extreme north of the appellation, right on the top of the hillside with a calcareous soil formed of pure alluvium. Its altitude, east-facing exposure and location on the terraces imparts great tension which enhances the sensation of complexity and spicy aromas. This name of this climat comes from the Old French "Vaucelle" which refers to a small valley. The relief of this climat is particularly undulating.
The wines spends 12 to 15 months in French oak giving elegance and refinement, charm and a perfect balance.
