Tasting Notes & Serving Suggestions

Pours crystal clear with an oily sheen on the glass. On the nose, it immediately opens with bright, sun-ripened orange oils and sweet citrus blossom, anchored by piney resin from classic Tuscan juniper and a gentle tickle of floral pink peppercorn.

On the palate, it delivers real freshness without ever tipping into confectionery sweetness. Juicy Valencia orange zest leads the charge, neatly complemented by Lind & Lime's trademark sharp lime bite and a clean, peppery backbone. Underlying notes of earthy coriander seed and sweet liquorice root give the mid-palate roundness and weight. The finish is long, dry, and appetising, leaving a clean, bittersweet orange marmalade warmth alongside crackled pepper and gentle spice.

Serving Suggestions:
  • The Signature G&T: Pour 50ml over plenty of cubed ice in a highball glass, top with a quality Mediterranean or light Indian tonic water, and garnish with a fresh wedge of orange or a pared twist of orange peel.

  • Valencia Negroni: Stir 35ml Lind & Lime Valencia Orange Gin, 25ml sweet red vermouth, and 25ml Campari over ice for 30 seconds. Strain into an ice-filled rocks glass and express the oils from an orange peel over the top. The punchy citrus cuts through the bitter herbs with ease.

About the Distillery

Tucked away on Coburg Street in Edinburgh’s historic port district, the Lind & Lime Gin Distillery is run by Muckle Brig, the independent team also behind the vertical Port of Leith Scotch Whisky Distillery. The brand takes its name from Dr James Lind, an Edinburgh-born naval surgeon who conducted one of the world's first clinical trials in 1747 aboard HMS Salisbury, discovering that regular rations of citrus fruit prevented and cured scurvy.

Leith itself was once the thriving trading gateway of Scotland, its docks stacked with timber, wine pipes from the continent, and crates of Mediterranean citrus. Lind & Lime draws direct inspiration from that industrial heritage, but pairs it with uncompromising modern standards: every drop is made using 100% certified organic botanicals, distilled using 100% renewable electricity, and packaged plastic-free in embossed, bespoke glass flagons designed in tribute to Leith’s 18th-century glassworks.

Distillation & Botanicals

Botanical Selection:

This release builds upon the distillery’s celebrated classic London Dry profile. The botanical bill features certified organic Tuscan juniper berries, fresh hand-peeled lime peel, aromatic pink peppercorns, coriander seed, angelica root, liquorice root, and orris root. For the Valencia expression, the distillers incorporate fresh Spanish Valencia orange peel directly into the recipe, introducing sweet citrus oils and a rounded aromatic depth while staying true to the spirit's dry, balanced architecture.

Distillation & Sustainable Production:

Distilled in small batches in Leith using 100% organic neutral wheat spirit and powered exclusively by green electricity. The fresh citrus fruits are peeled by hand on-site to capture volatile aromatic oils at their peak. Following distillation in their bespoke copper pot still, the spirit is cut back to 42% ABV using pure Scottish water. It is bottled without added sugars, artificial colours, or chill-filtration, allowing the full richness of the essential citrus oils to shine through in the glass.

The first tipple to come from Edinburgh's Port of Leith Distillery has arrived in the shape of Lind & Lime Gin! The name is inspired by Dr. James Lind of Edinburgh, who conducted one of the first clinical trials aboard the HMS Salisbury. In these trials, he noted that the scurvy patients eating citrus fruits were showing good signs. Hence the addition of lime within this gin.

To balance the powerful citrus freshness, the distillers also used pink peppercorn alongside five other botanicals (including juniper) to create the recipe.
