Tasting Notes & Serving Suggestions
Crystal clear in the glass. The nose opens with vibrant, lifted aromas of fresh cut green cane, sweet stalky botanicals, lime zest, and a faint mineral earthiness.
On the palate, it is crisp, textured, and delightfully punchy without rough edges. Crisp green apple, white pepper, and juicy tropical fruit meld with savoury vegetal notes and raw cane sweetness. The finish is brisk, clean, and dry, leaving lingering hints of citrus oil, lemongrass, and warming white spice.
Serving Suggestions:
-
The Classic Caipirinha: Muddle half a fresh lime chopped into wedges with one to two teaspoons of granulated sugar directly in a sturdy tumbler. Fill right up with crushed ice, pour over 50ml of Abelha Silver, and stir thoroughly.
-
Cachaça & Tonic: For a refreshing, low-effort drink, pour 50ml over plenty of ice, top with dry Mediterranean tonic, and garnish with a thick wheel of fresh lime or a bruised sprig of mint.
About the Producer
Abelha was founded with a straightforward ethos: produce exceptional, authentic cachaça while doing genuine good for the land and the people working it. Based in and around the historic town of Rio de Contas, situated high in the Chapada Diamantina mountains of Bahia, the distillery operates as a collective in partnership with local family-run smallholdings.
Rather than taking industrial shortcuts or planting sterile monocultures, Abelha champions traditional agricultural heritage. Every farmer receives fair compensation, investment into organic certification, and long-term support. In an industry dominated by bulk industrial spirits, Abelha stands out by keeping things independent, small-scale, and firmly grounded in sustainable community craft.
Production & Distillation
Farming & Raw Materials:
The sugarcane is 100% certified organic, grown without synthetic pesticides, chemical fertilisers, or crop-burning practices. Cultivated on high-elevation terraced soils, the cane is cut entirely by hand using machetes once it hits peak ripeness. The harvested cane is pressed within 24 hours of cutting to preserve the vibrant freshness and aromatic clarity of the raw cane juice.
Fermentation & Pot Distillation:
Fermentation is carried out naturally using wild, local yeasts alongside organic yeast feed, transforming the fresh juice into a low-strength wash over roughly 24 hours. Distillation takes place in small copper alembic pot stills, heated directly and managed by eye and experience. Abelha discards wide portions of the 'heads' and 'tails'—keeping solely the aromatic, pristine 'heart' of each run.
To retain its pure, unadulterated character, the Silver spirit is not aged in wood; instead, it is rested for around six months in inert stainless steel tanks. This allows the fresh esters and botanical nuances to soften, harmonise, and round out cleanly prior to bottling.
