Deen Vat 9 Cabernet Sauvignon has an enticing deep crimson red colour and offers intense aromas of dark fruits, rich dark chocolate, and subtle dried herb notes. The palate delivers layers of dark berry flavours complemented by cedar and a defined tannin structure. This wine pairs beautifully with a BBQ ribeye steak and ratatouille, and is equally enjoyable now or after careful aging for five years.

The De Bortoli family story is one of determination and triumph that started 90 years ago and is now told, generations later, across Australia.

Today, as a fourth generation enters the family business, De Bortoli is amongst the top wine producers in Australia with vineyards spanning six premium wine regions.
Vineyard and Winery
Fruit is harvested in the cool of the night to achieve a balance of fruit freshness, structure and ripeness. Upon arrival at the winery, the fruit was carefully destemmed into Potter fermenters, where fermentation took place over a 7-8 day period. Pressed off at dryness, the wine was matured in new and older American and French Hogshead barrels for 12 months. 20% was left unoaked to keep fresh and fruitful to blend with the barrel matured portions.
