About the Producer
CAVINO is a family owned winery, founded in 1958 and located on the slopes of Aigialia in Peloponnese, amid charming vineyards. The location is a combination of mountains and the sea, creating a unique climate that gives local grapes their exceptional quality.
Vineyard and Winery
Grown in the highlands of the Peloponnese, the vineyards benefit from a cool Mediterranean climate, where altitude tempers warmth and preserves natural freshness. The soils are sandy with limestone, providing excellent drainage and contributing to precision, minerality, and finesse.
Fermentation takes place over two weeks in stainless steel tanks, preserving freshness and aromatic purity. The wine is then kept on its fine lees for a minimum of 3 months, gaining texture, depth, and subtle complexity while maintaining a vibrant, precise profile.
