Kaveri was born out of a desire to see real, uncompromising spice restored to the drinks cabinet. Drawing deep inspiration from the vibrant street foods and roadside stalls of South India—most notably the nostalgic bite of inji mittai (traditional hand-pulled ginger hard candy)—the founders set out to craft a spirit that honours authentic culinary heritage rather than artificial flavour drops.
Instead of stripping out character through heavy chill-filtration, Kaveri embraces the cloudy, textured charm of unadulterated fruit and root. Produced independently in small batches in the UK, the focus remains squarely on ethical sourcing, unrefined raw ingredients, and a dedication to genuine flavour that needs no gimmickry.

Botanicals & Raw Ingredients:
The core of Kaveri is built upon high-grade fresh ginger sourced at peak maturity from prime growing regions across Peru, Thailand, and India, selected specifically for a balance of sharp aromatic punch and lingering gingerol warmth. Rather than relying on refined white sugar, sweetness is provided by unrefined jaggery—concentrated sugarcane juice that retains its natural minerals and dark caramel complexity. Fresh lime juice, green mango, and pinches of Himalayan pink salt and mineral-rich Indian black salt (kala namak) round out the sweet, sour, spicy, and savoury balance.
Maceration & Bottling:
The fresh ginger is pressed and cold-macerated with quality neutral grain spirit to lock in the bright, peppery oils of the freshly cut root without cooking out its fresh character. Blended carefully with the jaggery syrup, citrus, and salts, the liquid is deliberately bottled unfiltered at 20.3% ABV. Natural essential oils and micro-sediments remain suspended inside the bottle, meaning a gentle turn or shake before pouring is all that is needed to wake up its full aromatic fire.
