La Scolca, White Label, Gavi del Commune di Gavi has a pale straw yellow colour at its core with subtle green tinges. On the nose it is fresh and inviting, with an elegant, refined character. The palate is delicate and dry, with a distinctive nuttiness and a refreshing citrus acidity that defines the palate. This wine's profile makes it exceptionally versatile. Serve as an aperitif or pair with hors d'oeuvres, fish, and seafood. Excellent alongside pasta with light vegetable sauces such as pesto, or seafood pasta dishes like pasta alle vongole. Vineyard and Winery
The La Scolca estate is situated in the Piedmontese region, within the Alessandria province and the Alto Monferrato area. The vineyards are planted across a geological tapestry, encompassing red clays, white soils, marly, and alluvial lands. Within the Gavi municipality the estate is characterised by detritus-based soils, which are intricately mixed with sand and silt. The proximity of the sea and the influence of the Libeccio winds imbue the grapes with their signature freshness, while the tuffaceous soil contributes a distinct minerality. The grapes for this wine come from exuberant young vineyards located in the heart of Rovereto of Gavi, known as the “Gran Crù of Gavi”. Vineyard management adheres to traditional yet precise viticultural practices. The vines are trained using both the Guyot and "Cordone Speronato" (cordon spur) systems, which are meticulously managed in accordance with the stringent regulations stipulated by the "Disciplinare" of the Gavi DOCG. La Scolca® holds the SQNPI certification, and the vineyards are cultivated with respect for nature and without the use of chemical products, instead employing natural fertilisers and copper sulphate.
The grapes were gently pressed, and the must was fermented with wild yeasts at cool temperatures in stainless steel tanks, retaining the aroma 'precursors' from pressing until fermentation, which took place ‘sur lie’. Following fermentation, the wine was aged for an extended period on its lees, without any oak influence. The desired clarity was achieved through natural sedimentation.
