Tasting Notes & Food Pairings

In the glass the colour is a classic, luminous translucent ruby red. The nose opens with an immediate lift of pure red summer fruit—fresh wild raspberries, ripe redcurrants, and macerated black cherries—intertwined with faint dried rose petals, forest floor, and a subtle flick of cracked black pepper and toasted cedar.

On the palate, it is wonderfully supple, balanced, and energetic. There is plenty of generous, juicy cherry and bramble fruit upfront, backed by vibrant acidity that keeps everything lively and clean. The tannins are remarkably fine and silken, carrying the wine effortlessly across the palate into a long, savoury finish marked by wild berries and a touch of gentle wood spice.

Food Pairings:

An absolute treat at the dinner table that doesn't demand pomp or ceremony. It is cracking alongside pan-roasted duck breast with a redcurrant glaze, roast pheasant, or a proper Sunday roast chicken with herby butter under the skin. If you fancy a meat-free match, pair it with a rich wild mushroom and thyme tart, earthy lentil stews, or a wedge of creamy, mild farmhouse cheese.

About the Producer

Domaine Maldant Pauvelot is based in the heart of Chorey-lès-Beaune, tucked neatly beneath the slopes of the Corton hill. While parts of the Côte d'Or have climbed into stratospheric price tags, this family estate quietly focuses on what matters: honest craftsmanship, deep respect for Burgundy’s historic terroirs, and delivering genuine drinkability in the glass.

Steered with passion and practical winemaking wisdom, the domaine looks after prime parcels across the Côte de Beaune. Rather than over-manipulating their fruit in the cellar, they work sustainably in the vineyards and let the natural balance of each vintage take centre stage. The result is unpretentious, benchmark Burgundy with heart and staying power.

Vineyard & Winery

Viticulture & Terroir:

The fruit is sourced from established estate plots in the Chorey-lès-Beaune appellation, situated on the alluvial plains and gentle slopes spreading out from the foot of Corton. The soils here are a classic mix of limestone and clay (argilo-calcaire) shot through with limestone silt and gravel. These well-drained, medium-density soils naturally control vine vigour and encourage the roots to reach deep into the subsoil, yielding small, intensely aromatic Pinot Noir grapes with vibrant natural acidity. Sustainable vineyard practices and careful canopy work ensure the fruit reaches optimum phenolic ripeness while retaining fresh tension.

Winemaking & Maturation:

Harvesting involves a rigorous sorting process to ensure only pristine, healthy bunches enter the cellar. Vinification follows traditional Burgundian methods in temperature-controlled open-top vats, utilizing gentle pump-overs and occasional punch-downs (pigeage) to extract silky, fine-grained tannins and radiant colour without harshness. The wine is matured for 12 to 14 months in French oak barrels (around 20–25% new oak, with the remainder in seasoned wood), imparting subtle structure and refined spice while leaving the vibrant Pinot fruit fully in focus.
