Ninefold Dormont Spiced Rum is a Scottish rum made from an award-winning single rum and enhanced with nutmeg, allspice, aniseed, sugar and natural caramel for a balanced flavour. Enjoy it neat, or pair it with cloudy apple juice, lemonade, or cola for a delicious cocktail.
About the Producer
Ninefold Distillery is nestled within Dormont Home Farm at the heart of Dormont Estate, Dumfries & Galloway. A quiet rural setting in southwest Scotland, this is not an obvious location for a rum distillery!
After a year of planning, work began at the start of 2018 to convert two old cattle byres that were formerly used to milk cattle on the home farm. The older of the two buildings, now containing the still house, saw the most work. A complete tear down and rebuild over 8 months created a fully insulated, heated and serviced distillery, with solar PV to provide some electrical energy for the running of the building. The more ‘modern’ and larger byre next to the distillery was simply converted into a warehouse and is now the bond, the resting place for the casks.
A few more months, saw a hand built (in Scotland) copper hybrid pot still installed, licences obtained, and the first batches were started in Spring 2019.
About the Production
Dormont Spiced Rum is a unique take on this huge, and growing spirit category! For production they use their own Pure Single Rum as the base, and lightly spice it with natural flavour extracts of allspice, nutmeg and anise. A small amount of Fair Trade cane caster sugar (15 grams per litre) is used to round out the flavours, and the beautiful golden colour comes from a little caramel.
