Tasting Notes & Food Pairings
Pours a pale lemon-straw with youthful green flecks. The nose is instantly bright and lively, delivering zesty aromas of pink grapefruit, lime zest, and freshly cut grass, followed by juicier hints of passion fruit, green fig, and gooseberry.
On the palate, it strikes a terrific balance between crisp Atlantic freshness and ripe Cape fruit character. Mouth-watering flavours of citrus, crunchy green apple, and white peach lead the charge, followed by subtle tropical notes of melon and guava. A seam of stony, flinty minerality anchors the vibrant acidity, carrying through to a bone-dry, thirst-quenching finish that leaves the palate clean and refreshed.
Food Pairings:
A cracking white for simple, honest seafood. Pour alongside fresh Scottish mussels steamed with garlic and herbs, grilled sea trout, fish and chips, or smoked haddock fishcakes. It also cuts through creamy goat's cheese effortlessly and pairs particularly well with asparagus risotto, pea and mint pasta, or a fresh Greek salad tossed with salty feta.
About the Producer
Founded by husband-and-wife team Jeremy and Emma Borg, Painted Wolf Wines was built on two simple principles: crafting honest, site-specific Cape wines and supporting the conservation of one of Africa’s most endangered carnivores—the African wild dog (or painted wolf). Named after the heart of the pack’s community, 'The Den' range represents sociable, easy-drinking wines meant for gathering around the table with friends and family. A portion of every bottle sold directly funds conservation efforts through organisations such as Tusk and the Endangered Wildlife Trust, making each glass as purposeful as it is enjoyable.
Vineyard & Winery
Viticulture & Terroir:
The Sauvignon Blanc fruit is sourced from carefully selected, sustainably farmed vineyard blocks across South Africa’s Coastal Region, including pockets in Stellenbosch and the Swartland. The vines benefit from cooling breezes sweeping off the Atlantic Ocean, which temper the warm midday sun and preserve the essential natural acidity and delicate aromatic oils that define cool-climate Sauvignon Blanc. Soils range from decomposed granite to weathered shale, providing balanced drainage and imparting a subtle mineral tension to the wine.
Winemaking & Maturation:
Grapes were harvested in the cool hours of the early morning to safeguard fresh fruit aromatics and prevent oxidation. In the cellar, the grapes were protected under inert gas blankets during gentle crushing and pressing. Fermentation took place at cool temperatures in temperature-controlled stainless steel tanks to maintain maximum freshness and varietal clarity. The wine rested briefly on its fine lees to build mid-palate texture and soft mouthfeel before being fined using vegan-friendly methods and bottled under screwcap.
