Tasting Notes & Food Pairings

Pours a bright, pale straw yellow with a fine, energetic perlage that holds nicely in the glass. The nose is clean and immediately inviting, offering fresh aromas of crisp Granny Smith apple, conference pear, and white peach, alongside delicate hints of acacia blossom and lemon verbena.

On the palate, it is refreshingly dry and vibrant without being sharp. Lively orchard fruits lead the way, supported by mouthwatering citrus acidity and a light, frothy mousse that gives it great lift. The finish is brisk, clean, and thirst-quenching, leaving a lingering, savoury touch of lemon zest and green pear skin.

Food Pairings:

An effortless, versatile bottle that does not need a formal occasion to pop the cork. It is tailor-made for an aperitivo spread—think salted Marcona almonds, green olives, or crusty sourdough topped with Arbroath smokie paté. At the dinner table, its zippy bubbles cut through batter and fat effortlessly, making it brilliant alongside fresh haddock and chips from the local chippy, tempura prawns, or a plate of salt-and-pepper calamari.

About the Producer

Villa Braida takes its name from the stately nineteenth-century Venetian estate situated in Mogliano Veneto, right between the historic cities of Venice and Treviso. Today, the winemaking project forms part of Enrico Marcato’s respected family of wines. Marcato is an intuitive, pragmatic winemaker with extensive global cellar experience who returned home to the Veneto determined to showcase the region's historic varieties with honesty and precision.

Rather than chasing heavy extraction or sugary styles, the estate focuses on clean, terroir-driven expressions that deliver exceptional drinking pleasure at an honest price. Villa Braida’s approach to Prosecco is grounded and refreshingly unpretentious: let sound vineyard fruit and careful temperature control do the work, producing a benchmark Northern Italian fizz built for good company and simple enjoyment.

Vineyard & Winery

Viticulture & Terroir:

The Glera fruit is sourced from vineyards situated across the flat alluvial plains and low foothills of the Prosecco DOC zone in the province of Treviso. Sheltered by the foothills of the Venetian Alps to the north and tempered by cooling Adriatic breezes from the south, the vines enjoy warm, sun-drenched days followed by cool alpine nights. This temperature swing slows ripening, locking in the grape's delicate aromatics and bright, natural malic acidity. The soils are loose and deep, composed of alluvial gravel, pebbles, and sand, which provide excellent drainage and encourage the vines to root deeply. Vines are trained using the traditional Guyot system to ensure balanced yields and healthy canopy aeration.

Winemaking & Maturation:

Harvesting takes place in mid-September when the Glera grapes have reached an optimal balance of aromatic ripeness and zesty acidity. Upon arrival at the winery, the bunches are softly pressed in a pneumatic press to extract only the purest free-run juice, avoiding harsh skins or bitter phenolics. The primary fermentation is carried out in temperature-controlled stainless steel vats at 14–16°C.

To develop its trademark sparkle, the still wine undergoes secondary fermentation in sealed, pressurised stainless steel autoclaves using the Martinotti-Charmat method. The wine rests on its fine lees in tank for approximately two months to integrate the mousse and build a rounder mouthfeel before being bottled under isobaric pressure as a clean, dry Brut.
