Tasting Notes & Food Pairings

Pours a bright, pale straw yellow with a fine and persistent mousse. On the nose, it opens with fragrant elderflower and white blossom, followed by notes of ripe apricot, crisp green apple, and fresh white peach courtesy of the aromatic Moscato lift.

On the palate, it delivers all the celebratory snap and mouthfeel of classic Venetian fizz. The balance sits squarely between juicy orchard stone fruit and a bright, citrus-driven acidity that keeps the palate fresh, clean, and never overly sweet. It finishes dry and uplifting, with lingering notes of lemon zest and subtle blossom.

Food Pairings:

A versatile alcohol-free aperitif that holds its own across a spread of casual foods or party bites. It pairs neatly with garlic and chilli pan-fried king prawns, lemon-drizzled courgette fritto, or a whipped goat's curd and pea crostini. It is equally brilliant alongside light brunch fare, smoked salmon bagels, or a bowl of salty crisps and green olives.

About the Producer

Cantina Sacchetto is located in the heart of the Veneto region. Founded in 1920, today it is run by Filiberto Sacchetto, alongside his son Paolo and daughter Beatrice. Together they oversee all aspects of the winemaking process, with attention, passion and great flexibility, combining tradition with innovation. In 2022 Sacchetto was awarded the Equalitas Certification which officially recognises social, environmental and economic pillars of sustainability, through biodiversity, carbon and water footprint and ecological cultivation practices. Through innovation and investment in modern vinification techniques, the family produces stunning still and sparkling wines for which the Veneto region has become famous.

Vineyard & Winery

Viticulture & Terroir:

The fruit predominantly comes from the Veneto region which offers a distinctive viticultural landscape, shaped by a diverse array of microclimates and soil compositions. Its northern areas, influenced by the foothills of the Alps, offer cooler temperatures and a diurnal temperature variation ideal for aromatic white varieties, while the plains benefit from a more Mediterranean climate. The region is renowned for its Glera grape, which thrives in the calcareous and clay-rich soils that provide essential drainage and mineral complexity. Alongside Glera, Moscato thrives in the fertile ground, contributing to aromatic wines with fresh fruit and floral notes.

Winemaking & Maturation:

The must was obtained by gently pressing the grapes in a horizontal press, followed by slow, temperature-controlled fermentation with selected yeasts to obtain the base wine. The wine was made gently sparkling by the Charmat method, also known as the Martinotti method, a technique used for producing sparkling wines, which preserves delicate aromatic profiles. The secondary fermentation, which created the wine's effervescence, took place within large, pressurised stainless-steel tanks. The base wine, along with yeast and a measured amount of sugar (the liqueur de tirage) underwent secondary fermentation, during which the trapped carbon dioxide was then absorbed by the wine, resulting in its characteristic bubbles. Reverse osmosis was used to produce a wine of lower alcohol. This is a gentle, cold-filtration method to selectively reduce alcohol levels and restore balance. It operates without the need for heat, successfully preserving the wine's delicate flavours and aromatics while lowering the alcohol by volume.
