About the Producer

The success of this adventure is down to the unique pairing of this remarkable and complex terroir with the team at Domaine de Chevalier’s great expertise in producing fine dry white wines. Clos des Lunes pioneers an innovative revelation in the history of Bordeaux wine.

The result is an entirely new wine that possesses modernity but is reassured by tradition - with a deep blue label, a unique bottle shape, a modern cork and a short capsule. A wine that with time proves the sound reasoning behind this quest: “At present no vintage, no single bottle shows the least sign of fatigue. There is still freshness and vivacity. This wine has real energy…”, affirms Olivier Bernard.

Vineyard and Winery

Located in Sauternes, on one of the greatest white wine terroirs in France , the Clos des Lunes is a magnificent rolling vineyard planted with old Sémillon and Sauvignon Blanc vines. On very old vines, some perfectly golden clusters are chosen and delicately sorted grape by grape, by expert hands.

75 hectares of vines comprising 70% Sémillon and 30% Sauvignon Blanc with an average age of 35 years. There are three soils in this large area all complimenting each other in terms of the grapes produced.  On the Sauternes side there are deep gravels with
groundwater sources which bring the Power to the wines. On the Bommes side there is gravel soil on clay limestone substrate bringing the Freshness.  The minerality comes from the Barsac side from alluvial deposits from the Garonne. Each plot is harvested at peak ripeness with hand-picking, into small crates.

At the winery there is initial slow pressing in a pneumatic winepress, without destemming or maceration. Débourbage, or cold settling, by gravity flow in a cold room.
The wine is then aged with time resting on fine lees, regular stirring (bâtonnage) is done to gain further texture and complexity. This aging is up to 6/7 months with 25% in barrels and 75% in little stainless steel vats.
