Pours a bright, pale natural straw in the glass. The nose opens with crisp lemon curd, fresh green apples, and sweet poached pears, followed by warm barley flour, buttery shortbread, and rich vanilla pod. With a bit of air, lighter floral notes and faint honeycomb emerge alongside gentle oak shavings.
On the palate, it delivers impressive weight and texture without burning, carrying the 56.3% strength with remarkable grace. Mouth-filling flavours of lemon tart, vanilla sponge cake, and soft beeswax glide across the tongue, supported by gentle white pepper, toasted coconut, and clean malt sweetness. The finish is long, clean, and warming, tapering off with lingering citrus oils, dry oak spice, and a delicate pastry note.
Bottled at natural Fife strength, this is best approached neat first in a tulip glass to appreciate its syrupy mouthfeel and purity of spirit. Adding a small splash of soft water opens up the dram beautifully, releasing deeper orchard fruits, sweet malt, and softer vanilla cream.
About the Distillery
Situated just across the water from us in the Howe of Fife, Daftmill is as genuine as Scottish distilling gets. Run by brothers Francis and Ian Cuthbert, it remains a functioning arable and livestock farm first, with distilling fitted quietly around the agricultural seasons. There are no visitor centres, no gift shops, and no rush; distilling happens strictly during the quiet winter weeks and mid-summer lulls when the farm work slows.
The Cuthberts sow, tend, and harvest the malting barley on their own land, draw their process water from a private artesian well beneath the fields, and mature every cask in converted traditional farm steadings. Because production is tiny and dictated entirely by the farm calendar, every bottle released into the wild is an authentic snapshot of patient, unhurried Lowland craft.
Farm & Production
Agriculture & Terroir:
The spirit in this 2026 release was produced using 100% Publican variety barley, sown and harvested by Francis Cuthbert in the south fields of Daftmill Farm during August 2009. The Howe of Fife offers sheltered, fertile, free-draining sandy loam soils and a steady maritime climate, providing ideal growing conditions for malting barley with low nitrogen levels and rich starch yields. The grain was malted nearby in Alloa before returning home to the farm mash tun, ensuring absolute traceability from field to glass.
Distillation & Cask Maturation:
Distilled between November 2010 and January 2011 during the bitter winter months, when the farm's cooling waters run at their coldest. This cold-weather condensation encourages prolonged copper contact in Daftmill's tall, slender pot stills, producing an exceptionally clean, fruity, and light spirit style.
Unlike previous 15-year-old releases that included sherry wood, the 2026 Fife Strength was matured exclusively in a parcel of 17 first-fill ex-bourbon barrels, allowing the pure distillery character and vanilla-sweet oak to lead the profile. Bottled at a natural cask strength of 56.3% ABV without chill filtration or artificial caramel colouring, with worldwide allocation strictly limited to 3,294 bottles.
