The first release from Scotland's Dark Matter Distillers is Dark Matter Spiced Rum - very exciting stuff! Created in Banchory by two brothers, Jim and John Ewen, Dark Matter Spiced Rum is a molasses-based rum that features full-bodied notes of long pepper, fresh ginger, green peppercorns and allspice.
Aromas of rich, sweet ginger cake, ginger, and allspice. Some also describe notes of peppercorns, ginger, and BBQ sauce. Fiery ginger and peppery spice with sweet undertones of caramel and biscuits. One reviewer describes notes of chewy ginger, more peppercorn, chili, plum and raisin. Others note a balance between intense ginger, pepper spiciness, and warm, sweet biscuit. It is unashamedly punchy with spice, but with a touch of sweetness and a long finish. A feisty, energetic, and glowing finish with a black pepper burn rather than an alcohol burn. This spiced rum can be enjoyed neat, over ice, or in a variety of cocktails.

Dark Matter Spiced Rum is produced by Dark Matter Distillers in Banchory, a town in the North-East of Scotland. It was founded by brothers Jim and John Ewen. They are the first rum distillery in Scotland to produce a molasses-based rum, including making their own molasses within the UK. The distillery is known for its hand-crafted approach, infusing each batch with fresh ingredients such as Oriental ginger, Indonesian long pepper, allspice berries, and Thai green peppercorns.
