On the palate, it delivers everything you look for in classic, crowd-pleasing Prosecco: crisp fruit flavours of white peach, honeydew melon, and tangy citrus zest, wrapped in a soft, creamy mousse. It sits comfortably in the traditional 'Extra Dry' profile, meaning there is just a touch of natural fruit sweetness to soften the brisk acidity. The finish is brisk, clean, and thoroughly refreshing.
Food Pairings:
An easy-going aperitif that needs no fuss. Pair it with salty nibbles like salted crisps, Gordal olives, and toasted salted almonds, or pour it alongside a weekend plate of Scottish smoked salmon on buttered toast. It is equally brilliant cutting through fish and chips from the local chippy or served alongside light shellfish starters and creamy goat's cheese.

About the Producer
Di Maria is crafted by Casa Vinicola Botter, a family-run producer established by Carlo Botter back in 1928. Starting out as a humble small-scale business selling local Veneto wines in wooden demijohns and casks, the house has steadily grown across three generations into one of the most reliable and respected names in northern Italian sparkling wine.
Now run by the Botter family alongside an experienced winemaking team, the company combines near-century-old cellaring know-how with cutting-edge, temperature-controlled winery tech. Their focus with the Di Maria label has always been honest and simple: delivering clean, fruit-pure Prosecco with genuine regional character at a fair, weekday-friendly price point. It has long been a house pour on Dundee's waterfront at our sister venue, The Wine Press, on Shore Terrace.
Vineyard & Winery
Viticulture & Terroir:
The Glera fruit is harvested across selected vineyard parcels in the Prosecco DOC zone, centered around the province of Treviso in the Veneto plains. Here, between the pre-Alpine hills and the Adriatic coastline, the vines grow in deep, alluvial gravel-and-clay soils. Warm, sun-drenched afternoons develop juicy orchard fruit flavours, while cold night-time air descending from the Dolomites locks in the lively, crunchy acidity essential for high-calibre sparkling wine.
Winemaking & Maturation:
The grapes are harvested promptly at optimum freshness to preserve their delicate aromatic compounds. After gentle pneumatic pressing and initial cold settling, the clear juice undergoes a temperature-controlled primary fermentation in stainless steel tanks. The secondary sparkle is produced using the classic Martinotti-Charmat method inside pressurised autoclave tanks over roughly one month. This process captures the gentle natural carbonation while keeping the fresh, bright Glera aromas front and centre. The wine is sterile filtered, vegan fined, and cold-bottled under pressure to ensure crisp, vibrant effervescence in every glass.
