Domaine Maldant Pauvelot is rooted deep in the soils of Chorey-lès-Beaune, with winegrowing heritage dating back to 1893 when Jean Pauvelot first laid the foundations. Today, sixth-generation vigneron Jean-Luc Maldant oversees the family estate, combining instinctive respect for traditional Burgundian craftsmanship with modern, exacting cellar standards.
Covering roughly 25 hectares across prime Côte de Beaune and Corton territory, the domaine goes about its business with quiet dedication. While Chorey-lès-Beaune is famous almost entirely for its soft, charming reds (which account for well over 90% of the appellation's production), white Chorey is something of a well-kept secret. Domaine Maldant Pauvelot treats this rare cuvée as a true flagship—delivering all the polish, depth, and character of top-tier Côte de Beaune Chardonnay without the steep premier cru tariff.
Vineyard & Winery
Viticulture & Terroir:
The grapes are farmed on the plains and gentle lower slopes of Chorey-lès-Beaune, sitting just below the hill of Corton. The terroir is composed of well-drained alluvial limestone-clay soils with a moderate scattering of gravel and limestone pebbles (argilo-calcaire). This soil structure gives the Chardonnay vine easy drainage while forcing root systems deep to gather essential mineral complexity. The vines benefit from easterly exposure that catches morning sun to encourage steady, balanced ripening, preserving vital natural acidity and citrus aromatics during harvest.
Winemaking & Maturation:
Grapes are hand-harvested at peak balance between acid and ripeness. At the winery, bunches undergo gentle, protective pressing under inert gas to prevent premature oxidation and lock in delicate floral aromatics. The juice is carefully settled before alcoholic fermentation, which takes place in a mixture of stainless-steel vats and French oak barrels. The wine is then aged for 14 months in French oak barrels (around 25% new wood), with periodic, light bâtonnage (lees stirring) to build mouthfeel and subtle hazelnut roundness without dominating the wine's limestone energy.
