Introducing Domaine Saint Etienne 'Le Caprea' Costières de Nîmes, a rich and delicious red wine with intense garnet red colour and bright purplish reflections. Its nose boasts ripe wild fruits like raspberries, blackberries, and blackcurrants, with a touch of morello cherries. The supple and silky tannins offer a delicate grip that helps provide a long finish.
Vineyard and Winery
The plots are located on the north-eastern edge of the Costières de Nîmes appellation. Located on the Villafranchian terrace (old quaternary), the terroir is made up of pebbles and locally rolled pebbles covered with silt. The presence of clay in depth allows sufficient water retention to help the vine withstand the sun and intense droughts in the Gard. The grapes are harvested early in the morning to avoid extreme heat and to best preserve the grapes.
After complete destemming, the grapes are vatted in concrete vats where each grape variety is vinified separately to obtain the best of each. The alcoholic fermentation is done with indigenous yeasts and followed by regular pumping over and racking. Each vat is then drained with separation of the free-run and press juices. Finally, a blend is made after the end of malolactic fermentation. Aging in concrete tanks for 7 to 10 months.
