Vineyard and Winery
De Bortoli select fruit from vines with generous canopies allowing natural fruit ripening. The fruit is picked and gently pressed and the juice allowed to settle naturally before being filtered. The wine is cold fermented to retain fresh fruit characters. For the wine to be as fresh and fruit driven as possible it is bottled without long-term maturation.
