Tasting Notes & Food Pairings
Pours a bright, pale straw with subtle greenish glints. The nose opens with clean, lifted aromas of crisp green apple, white blossom, zesty lime, and a touch of fresh grapefruit peel.
On the palate, it is light-on-its-feet, bright, and wonderfully thirst-quenching. Juicy flavours of crunchy orchard fruit and lemon zest take the lead, tempered by a subtle note of raw almond and gentle melon through the mid-palate. The finish is brisk, clean, and dry, leaving a lingering stony minerality that keeps you coming back for another sip.
Food Pairings:
A cracking, versatile white for everyday eating. It pairs effortlessly with pan-fried haddock, grilled sea bass with lemon and herbs, or a steaming bowl of garlic-steamed mussels. If you fancy pasta or vegetarian fare, it is spot on alongside a classic basil pesto linguine, courgette and pea risotto, or a simple plate of fresh goat's cheese and oatcakes.
About the Producer
Named after the popular Italian expression Ke Bontà—meaning "what goodness!" or "how delicious!"—this wine is crafted by Adria Vini, a close winemaking partnership founded in 2003 between Boutinot and the respected Araldica cooperative in southern Piemonte. Led by native Piemontese winemaker Claudio Manera, the goal has always been simple and straightforward: work closely with long-standing family growers across the Monferrato hills to produce honest, terroir-driven regional wines that overdeliver on quality without costing the earth. There are no gimmicks here—just careful viticulture, sensible winemaking, and genuine drinkability.
Vineyard & Winery
Viticulture & Terroir:
The Cortese grapes—the very same historic variety famous for Gavi—are cultivated in the rolling Monferrato hills in the south of the province of Asti. The vineyards are planted at altitudes between 250 and 400 metres above sea level on southwest-facing slopes, ensuring plenty of daytime sunshine to ripen the fruit alongside cool night-time air currents descending from the Alps and Apennines. The soils are a classic regional blend of limestone and clay, which provides natural water retention and imparts the grape's signature tension, freshness, and mineral backbone.
Winemaking & Maturation:
Grapes were picked in the cool of early autumn to preserve aromatics and acidity. Following destemming and gentle pressing, fermentation was carried out at cool, controlled temperatures entirely in stainless steel vats to retain the grape's pure citrus and floral character without any heavy oak influence. The young wine was aged on its fine lees in tank for three months, giving it a touch of extra texture and rounded mouthfeel before undergoing vegan-friendly fining, filtration, and bottling under a Stelvin screwcap to seal in pristine freshness.
