Pours a natural, unadulterated golden straw. On the nose, it opens with crisp lemon and orange peel, fragrant elderflower, and runny honey, underpinned by a soft, welcoming drift of coastal peat smoke.
The palate is clean, vibrant, and nicely weighted without being heavy-handed. Sweet barley sugars, juicy toffee apple, and salted caramel meet tropical fruit notes, while the subtle peat smoke weaves through gently rather than dominating the dram. It finishes long, rounded, and warming, leaving lingering notes of butterscotch, toasted walnuts, and juicy stone fruit.
Serving Suggestions:
Best enjoyed neat in a tulip glass to let the aromas settle, or with a couple of drops of cool water to tease out the lighter elderflower and citrus tones. If you are having a bite alongside it, it pairs well with Scottish hot-smoked salmon, a slab of mature farmhouse cheddar, or warm apple and bramble crumble.
About the Distillery
Founded in 2005 by Anthony and Kathy Wills, Kilchoman was the first new distillery to be built on Islay in over 124 years. While many modern distilleries rely on large-scale industrial maltings, Kilchoman set out with a clear purpose: reviving the lost tradition of farm distilling. Located at Rockside Farm on the wild, windswept western edge of the island, the team manage every stage of whisky-making on-site—from sowing the barley in the surrounding fields to malting, distilling, maturing, and bottling. Independent, family-run, and refreshingly down-to-earth, Kilchoman lets honest craft and Islay's raw coastal elements do all the talking.
Farm & Production
Barley & Kilning:
Rockside 11 is produced entirely from barley grown on the fertile machair soils of Rockside Farm. The harvested grain is floor-malted by hand at the distillery and lightly kilned with local peat cut from Islay’s mosses to around 20 PPM. This lower peat level allows the fresh, grassy character of Kilchoman's own farm-grown barley to shine through clearly.
Distillation & Maturation:
Following a long, gentle fermentation to develop bright fruit esters, the wash is run through small, high-necked copper pot stills that promote plenty of reflux, creating a refined and citrus-led spirit. The whisky spent 11 years maturing in a carefully balanced parcel of fresh ex-bourbon barrels and seasoned ex-sherry casks in traditional dunnage warehouses, taking in the sea air blowing off Machir Bay. Bottled at 46% ABV, non-chill filtered, and with natural colour throughout.
