Le Jade Chardonnay is a wine we love here at Aitken's. Youthful and fruity, with a fragrant and persistent aroma and slightly toasted nuances: such a clean, refreshing modern chardonnay. The taste is juicy and round with white fruits and honeysuckle, and just a touch of oak to round things off.

Perfect with Seafood, White Meat and a cheese board. This emblematic Chardonnay of the Beauvignac Wine Family with a generous, round, delicate taste profile and intense aromas of fruit, flowers and spices which go perfectly with smoked salmon and fish in sauce such as grilled salmon with Béarnaise sauce. Le Jade Chardonnay will also pair beautifully with sole. With cooked shellfish try Rosemary and lemon scallop skewers, or oysters. Le Jade Chardonnay also works with white meats such as a filet mignon in a goat cheese and ham crust or a supreme of guinea fowl in a white wine sauce. Goes perfectly with more or less mature pressed cheeses. 

About the Producer

The Cave de Pomérols was founded in 1932 and has since then steadily grown and prospered – and has seen a great deal of modernisation since then! The vineyards benefit from a temperate Mediterranean climate.

The Le Jade Chardonnay comes from the village of Pomérols, between Sète and Agde on the Thau Basin. The pure fruit scent and the fresh, seductive taste means this Chardonnay regularly wins prizes.

Vineyard and Winery

The vines are planted on terraces of clay-limestone overlooking the Etang de Thau.  The vineyard and winemaking practises modernise constantly to cope with the changes in climate.  There is a bit of tradition still, they ferment with cold vinification to retain the lovely primary fruit, these days though they are blessed with temperature controlled tanks for this purpose.  Le Jade Chardonnay is aged for a short time in vats prior to bottling and distribution.
