Menade Nosso Verdejo Natural has a pronounced honeyed and floral nose, with undertones of barley sugar, alongside savoury notes. The palate has texture with distinctive characteristics from the lees aging, offering bakers bread and enhanced floralness.
The grapes for this verdejo are selected from parcels grown in stony clay and limestine soils. After hand-harvesting they are fermented using wild yeasts in stainless steel tanks. The wine also undergoes malolactic fermentation spontaneously, after which then the wine is gently racked before spending around 3 months on its lees. No sulphur is added during the vinification process.
