Ninefold Cask Aged Pure Single Rum is an IWSC Gold Award-winning rum made in Dumfries & Galloway, Scotland. Distilled in pot stills, it is aged for 1.5 years in American oak barrels, imparting smooth notes of butterscotch, caramel, toffee, chocolate, oak, vanilla and banana. An exquisite spirit for the rum fans and initiates alike.

About the Producer

Ninefold Distillery is nestled within Dormont Home Farm at the heart of Dormont Estate, Dumfries & Galloway. A quiet rural setting in southwest Scotland, this is not an obvious location for a rum distillery!

After a year of planning, work began at the start of 2018 to convert two old cattle byres that were formerly used to milk cattle on the home farm. The older of the two buildings, now containing the still house, saw the most work. A complete tear down and rebuild over 8 months created a fully insulated, heated and serviced distillery, with solar PV to provide some electrical energy for the running of the building. The more ‘modern’ and larger byre next to the distillery was simply converted into a warehouse and is now the bond, the resting place for the casks.

A few more months, saw a hand built (in Scotland) copper hybrid pot still installed, licences obtained, and the first batches were started in Spring 2019.

About the Production

Ninefold was launched in 2019 with their signature Pure Single Rum. Why the name? ‘Pure’ signifies a traditionally pot distilled rum, ‘Single’ having the same meaning as a single malt i.e. single distillery product, and ‘Rum’ meaning…well…rum! 

Distilled from scratch using cane molasses at Dormont Home Farm, it was originally bottled at 40% ABV but with this bottle relaunch they took the opportunity to bump the strength to a tongue tingling 46%. The 18 months in American Oak lets this fall to 45%.
