Tasting Notes & Serving Suggestions
Crystal clear in the glass, turning an inviting, milky opalescent white when water or ice is added. The nose offers immediate, vibrant aromas of fresh green aniseed, sweet fennel, and gentle mountain herbs, grounded by subtle notes of warming spice and pine resin.
On the palate, it is remarkably smooth and silky, avoiding the harsh burn found in lesser spirits. Pure liquorice and crisp anise take centre stage, balanced by delicate undertones of coriander seed, mint, and a touch of nutmeg. The finish is clean, long, and thirst-quenching, leaving a lingering, cooling aniseed freshness.
Serving Suggestions & Food Pairings:
The proper Mediterranean ritual: pour a measure into a tall glass, add a splash of cold water, and finish with a cube or two of ice (adding water first ensures the essential oils bloom smoothly without crystallising).
Ouzo is meant for snacking and conversation, not rushed drinking. It is at its best alongside sharp, salty, and savoury bites: grilled squid or prawns, pickled anchovies, briny kalamata olives, grilled halloumi, or a simple plate of good feta drizzled with olive oil and oregano.
About the Producer
Ouzo of Plomari dates back to 1894, when founder Isidoros Arvanitis set out to craft a spirit that captured the aromatic flora and maritime spirit of Lesvos. Settling in Plomari—a picturesque coastal town famed as the spiritual homeland of Greek ouzo—he perfected a recipe blending indigenous herbs, pure spring water, and locally grown aniseed.
More than a century later, the distillery remains Greek-owned and proudly independent. While the facilities have been updated to modern standards, the fundamental production principles have not budged an inch: traditional recipes, local agricultural partnerships, and an unwavering commitment to slow, honest distillation over artificial short-cuts.
Distillation & Botanicals
Botanicals & Provenance:
The heart of Plomari’s character is its certified organic aniseed, grown in the distillery's dedicated fields in the nearby village of Lisvori. Due to the area’s unique microclimate and volcanic soil, Lisvori anise is widely acknowledged as some of the finest in the world. Alongside anise, the recipe incorporates star anise, wild fennel, Chios mastic, cinnamon, coriander, and citrus peel, brought together with soft, untreated water drawn from the springs of the Sedountas river.
Production Method:
Unlike mass-market ouzo that relies heavily on neutral alcohol flavoured with essential oils, Ouzo of Plomari is 100% traditionally distilled. The botanicals and pure alcohol are steeped and slowly double-distilled in 18 small, handmade copper alembic stills. The distillers meticulously separate and discard the 'heads' and 'tails', keeping only the pure, aromatic 'heart' of the run. The result is a balanced, naturally sweet, and refined spirit that requires no artificial additives.
