Plantation Isle of Fiji Rum is intense on the nose starting with molasses, pear and varnish. It then becomes fruitier and spicier with apple, banana and gooseberry, infused with nutmeg and vanilla and a hint of smoke.
On the palate it is rich and round, it follows the nose with vanilla fudge, honey, ginger and fruity notes of prune and coconut. A very long finish of dried banana, bourbon and allspice.

During the secondary process, the rums are exported to Cognac where they undergo a series of age old Cognac making techniques.
