This rich red wine is crafted with Negroamaro grapes and a touch of Malvasia Nera, resulting in a bright, purplish hue. Notes of black fruit and a crisp, slightly bitter finish highlight the modern winemaking process. This Salice Salentino is very versatile and matches a wide range of foods especially meats and cheeses. Serve at 16-18°C.
About the Producer
In the hands of the third generation of the family, represented by Sebastiano and Marco, the most up-to-date viticultural and oenological practices are married to the deepest respect for natural processes. Their programme of uncompromising quality begins with the expert management of 75 hectares of estate vineyards, farmed according to the protocols of sustainable viticulture. The vineyards are located at 200-230 metres with deep tufa-limestone soils, yielding fine native-variety grapes, the whites with firm acidities and the reds of impressive elegance and structure.
Vineyard and Winery
The harvest took place in the second week of September. Maceration lasted 8-9 days in stainless steel tanks at a temperature of 28 °C. Their intention through their state-of-the-art vinification process tends to be to enhance the freshness of the fruit together with its varietal characteristics.
The wine was aged for 12 months in vitrified cement tanks, where malolactic fermentation develops. It is subsequently aged for a couple of months in the bottle before release.
