Rook en Spieëls Reflektief Palomino boasts a fresh, crisp flavour enhanced with white delicate flower and green fennel notes. Its lingering salinity adds an extra depth of flavour, perfect for pairing with seafood dishes.
About the Producer
This wine is made in colaboration with one of our suppliers, Moreno Wines, and for them the idea of creating a Palomino that wasn’t from Jerez seemed like great and obvious choice. But where could this happen…turns out South Africa. From old bush vines (certified from 1977 – the old vine project in South Africa. Like a census for old vines) this is a real rarity - one of a handful of single varietal Palomino’s made in South Africa. If you speak to the farmers in South Africa, Palomino was the workhorse. Mainly used for brandy production, this was the grape used to pay the mortgage. This wine, however, could not be further from that.
Vineyard and Winery
With yields kept below that permitted in Burgundy this is a wine that really showcases the terroir and how brilliant the Palomino is suited to it. The grapes are grown 900m up on the magnificent Piekenierskloof plateau. Made in 100% stainless steel, naturally fermented and kept on it’s fine lees until bottling. This is a wine that you’ll be hard pressed to replicate from anywhere in the world.
