The DOM Cabernet Sauvignon from Tabalí is marked by vibrant blackcurrant on the nose, accompanied by subtle notes of cedar, rosehip and star anise. Its full-bodied palate has a bright vein of freshness which ensures excellent balance, while the tannins' finesse provides a well-rounded, lingering finish. Fans of red wine will revel in the rich, complex flavors and lush, tannic texture. Enjoy a glass at the perfect temperature to experience the full flavor profile.
This Cabernet Sauvignon complements rich flavours such as a ragout, lamb shanks, or casserole. Also pairs well with a black olive pizza or porcini mushroom tagliatelle. Vineyard and Winery
Grapes for Tabalí DOM Cabernet Sauvignon come from vines planted on a mild, south-facing incline, which in turn receives less sunlight during the summertime, creating a cooler area. The area gets quite windy in the afternoons because of its proximity to the Maipo river gorge. All of these factors make this vineyard a cooler place than the rest of Valle del Maipo. The soil on the slope is of colluvial origin broken up by very stony layers. This soil is perfect for planting Cabernet Sauvignon because of its low fertility, thus naturally controlling the growth and production of grapes, resulting in very high quality. The grapes ripen more slowly, producing fresher and more elegant wines. Harvesting was done by hand into 20kg-bins to avoid any damage to the fruit. This began in the first week of April, when the optimum phenolic ripeness had been achieved. At the winery the bunches were very carefully selected, before destemming and further selection. The fermentation took place in small stainless steel tanks at controlled temperatures with maceration occurring after the alcoholic fermentation. Tabalí DOM Cabernet Sauvignon 2015 was aged in French oak barrels for ten months.
