Vineyard and Winery
Hand harvested then gently whole-bunch pressed. Racked to old French oak puncheons for fermentation with natural and cultured yeasts.
Post-fermentation, each barrel underwent twice weekly batonnage (lees stirring). Malo-lactic fermentation occurred once the weather warmed in the spring. Individual barrel assessment, with only the best deemed exceptional enough to make the final blend.
