Bottled at 55% ABV, Uncharted Whisky Co. Ace of Speys, Aberlour 11 Year Old Single Malt Whisky is natural colour and plays its hand with genuine confidence. On the nose there is a wonderful aroma of pear drops, dried mango, pineapple, butterscotch, and oak. The palate provides baked apples and brown sugar at the fore, closely and harmoniously followed by those dried mangoes and pineapple juice, with pronounced spice and oak throughout. The finish is tropical fruits transitioning into butterscotch, then woody spices and lasting warmth.

Ace of Speys takes the elegant, fragrant Aberlour spirit, super charges it with super sherry casks (more on that later) and, bottles at a rock n roll 55% ABV. Flavour drips out of every pore with this super Scotch.
A story… in the South of Spain, in Jerez, they make sherry. There is a sherry house called Spinola and they kind of go their own way… They only grow Pedro Ximenez grapes, and in some instances make an Oloroso style sherry with them. The wine produced is of the highest quality and made to be savoured as a premium sherry, That is the casks type of these two barriques. It is not a super dark colour but the palate is elegant, sweet and balances the distillate with the wood influence- subtlety over saturation!
Jack and Dana at Uncharted Whisky Co. love working with whiskies that often end up in blends because if you want to try them in their best guise- small batches of spirit in great wood- you have to come to the indie whisky world where Uncharted and their peers thrive.

About the Producer
The Uncharted Whisky Company is an independent whisky bottler operated exclusively by Jack Breslin and Dana de Vos. They work in the gorgeous village of Fintry, Scotland where they harbour a passion for creating exceptional whisky.
They select casks of whisky that they love. Sometimes bottling them straight away and sometimes maturing them further. Sometimes they do something a little more radical and finish the maturation in a completely different cask.
Each whisky has a name which comes from the world of music. Even their blend is called Mixtape. It is fun and creative and as interesting to collect as the vinyl.
Their goal is quite simply to create!
