Pale golden with hints of green, this cava displays a bright, inviting appearance. The nose is fresh and fruit-forward, with crisp apple and white fruit character complemented by subtle, elegant notes from extended ageing. On the palate, fine bubbles create a silky, refined texture. Vibrant acidity provides excellent balance and structure, finishing with a satisfying, persistent aftertaste that lingers pleasantly. An excellent aperitif or party wine this Cava is also a fantastic wine with plenty character and structure for a wide range of foods.
About the Producer
In 1865, the birth of Vallformosa was marked by the cultivation of vineyards near the Masía La Sala in Vilobí del Penedès, Barcelona. By 1938, the first bottles of Vallformosa cava were crafted, establishing the company as a responsible and sustainable producer. Environmental stewardship is at the core of their operations, with all wines requiring 40% less energy and 99% of waste being recycled. Additionally, Vallformosa is dedicated to promoting organic practices and currently 20% of their grapes are organically grown, with a goal to expand this percentage year after year.
Vineyard and Winery
A combination of manual and mechanical methods. The Macabeo grapes are harvested in early September, followed by the Xarel·lo grapes in mid-September, and finally the Parellada in the first week of October.
The first fermentation is carried out in stainless steel tanks and the second fermentation takes place in the bottle, following the traditional method.
Average ageing of 24 months on its lees.
